the other day when I updated my iMac, the 32 bit app quit working.
What do we do about outputting videos, now that that app is gone?

For right now you should keep a bootable partition of the pre osx 10.15 os version you were running the 32 bit version on. Either on an internal disk partition, or on an external drive. You can also run one inside of Parallels.

You can process folders of numbered frame images using the 64 bit application build.
