Regarding your email. It seems like a big part of your problem is that you are painting in the black background with is muddying up everything. The example you wanted to learn is really just painting in the foreground. On a white background as well.
You can use the controls in the path start control panel to inhibit path starts. So, you could try inhibiting super low luminance values (which would be dark) from having path starts. However, you also have dark detail in your foregound image, so that might not work as well for your particular source.
You could select the background, then invert the selection so you get the foreground image selected. Then use the path start inhibit controls so that only selected areas of the canvas have path starts.
Or, you could turn on masking, and then mask the path. That way you get complete paint nibs drawn.
Here's a tip on masking and selection. Read about the paint masking options in the tip to understand what i was referring to (path vs paint mask).
