I am trying to get my head around the 'depth mask'; how and where would I use it?
is it like the blanking buffer, in that it controls the ability to overlap/or not existing painted strokes
but in some sort of Y axis way?

The quick answer is yes. If you think of the brush nib as having a vertical height above the canvas (z-depth), then it uses a z-buffer algorithm to control overlap of the previously laid down nibs in the paint stroke.
